Dessert for Breakfast! (Sometimes Healthy) Oatmeal Banana Split Sundae

Sometimes I have to pinch myself :-)!

For those of you lookin for a little something different for breakfast tomorrow, I think I  have a winner….

This morning, I needed a pick-me-up from a long week at work…so I went for a short 4 mile run in beautiful Central Park. Great ideas often come to me when I’m running. It must be my amazing playlists. Anyway, I thought of the oatmeal waiting for me back in the fridge. I made it last night using Almond Breeze to give it a calcium kick and some creaminess. I was feeling very blah about the breakfast that awaited me.

Then I thought what if I take this…

And combine it with this….

Bare with me people...

With that brilliant (maybe a little strange) idea in mind, I got a lil burst of energy and sprinted home to give it a shot. Here is how it turned out:

Sometimes you need a little dessert for breakfast!

Part healthy/part un-healthy but unquestionably delicious and just what I needed to help me power through another Hump Day!

It didn’t really look quite so pretty once I mixed it all together…but it tasted even better! The Cool Whip added an extra creamy layer to the oatmeal and the bites with the fruit and chocolate sauce were almost sinful.

Yummy Oatmeal Banana Split Sundae!

I also crumbled up a mini ice cream cone for some texture (but I forgot to take a picture – this food blogging stuff isn’t so easy!)

See below for the recipe

  • 1 packet instant oatmeal
  • 2/3 cup Unsweetened Almond Breeze
  • 1 packet of Splenda
  • 2 tpsb fat free or low fat Cool Whip
  • 1/2 banana
  • choice of fresh fruit (I used strawberries, kiwi and pineapple)
  • Drizzle of Hershey’s Low Sugar Chocolate Syrup
  • 1 crumbled mini ice cream cone
  • A handful of sprinkles and a Maraschino Cherry to top it off

Prepare oatmeal on stove or in microwave; cool 20-30 minutes in the fridge (maybe go for a short run so you feel like you deserve a little indulgence?); place 2 heaping tpsb of Cool Whip on top of your chilled oatmeal, followed by the fresh fruit; crumble 1 small ice cream cone and drizzle entire dish with a small amount of chocolate syrup; top with a cherry and enjoy your (sometimes healthy) dessert for breakfast!
