As much as I enjoy writing for my blog, I sometimes find myself dreading Monday posts for two reasons:
- It’s Monday.
- Summarize. Summarize. Summarize. Clearly, that’s never been my thing. And, I always have a hard time capturing my weekends in one short “ish” post.
So, this Monday, I’m going to keep it simple by highlighting the top 5 Sometimes Healthy moments from this weekend. Let’s start with #5…
5. S’mores Sundae. On Friday night, we took our friends out for dinner. These are the friends who graciously watch our dog while we’re out of town. Not only do they watch our dog, but they send us the cutest pictures ever of how much fun Cole is having.
These friends have a dog (Cole’s girlfriend, Lilly) and a baby, which, to Cole, means more people to play with and shower with doggie kisses.
After dinner, our friend said she had passed this kitschy looking ice cream cafe in Poughkeepsie that she thought would be right up my alley. She said it was covered in pink and surrounded by a cool-looking playground. Sold.
Debra’s T.’s Ice Cream Cafe did not disappoint. The exterior, clad in bright pink and blhek reminded me of my doll houses from when i was little. And the interior…oh the interior was even better. I wish this place had existed when I was five!
There were fun toys and signs hanging everywhere.
And, of course, loads of flavors listed on the menu, from Birthday Bash (swirled with blue) to Mint Moose Tracks. Every one ordered small cups…I ordered a giant S’mores Sundae with scoops of Birthday Bash, Cookie Dough and Salted Caramel. Hey, when in Rome.
I think the last time I ordered a sundae was high school, and this sundae sure showed me what I’ve been missing. From the graham crackers to the chocolate and marshmallow syrup, everything blended together perfectly for a sinfully sweet treat.
Then my BF thought it would be fun to declare “We can’t leave until Jamie finishes the WHOLE thing.” So, everyone played on the playground, while I tried (unsuccessfully) to finish my towering sundae.
I’ll definitely be seein’ Debra T’s again!
4. 4 AM Breakfast Pinspiration. Maybe it was all the sugar, but I woke up at 4:30 AM on Saturday morning and just couldn’t get back to bed.
So, I did what any modern-day woman does when she can’t sleep. I surfed Pinterest. I found a lot of exciting things (per usual), but this particular pin caught my eye.
As soon as the clock struck 6:00, I was off to DD for a giant ice coffee (with the early wake up call, I needed it) and the ingredients for my Spinach Feta Egg Sandwich. Didn’t have any sundried tomatoes, so I improvised with roasted red peppers. I also healthified with egg whites and low-fat feta cheese.
It was the perfect way to kick off a sleepy Saturday. And, the BF was pleased to walk downstairs to a breakfast of egg sandwiches and hash browns.
3. Millions of Peaches. Before my tiredness set in, I had the brilliant idea of us heading to Lawrence Farms Orchards for some fruit and veggie picking. We had been to Lawrence Farms before for apple and pumpkin picking, but I wanted to see what the joint had to offer during the summer.
This place is a “country girl’s dream.” Besides giving you the opportunity to pick your own produce, it’s also a very serene setting, with great views of the mountains and an adorable pond.
I was hoping to pick some strawberries, but we were a little late in the season. Luckily, there were “millions of peaches, peaches for me!”
As we picked our peaches, I couldn’t help but imagine what it would be like to work on a farm. It’s hard work!
And, we also found a whole lot of corn. Check out my “cornhusker.”
We also picked some raspberries and squash.
We grilled up the corn Saturday, with some chicken legs and brussels sprouts. Although we ate it plain, it was quite sweet and tasty. Coming from a Nebraskan, that’s a compliment! We know our corn 😉
Late last night, I decided to try to whip up our fruit into some sort of desert.
I had a bit of a problem peeling the peaches and was not too happy by the end of my baking adventure.
Nonetheless, the raspberries and peaches were mixed together with a bunch of sugar.
And topped with a buttermilk crust, sprinkled with brown sugar.
The tartness of the raspberries and peaches combined for a well-balanced, sweet dessert. I also used both white and yellow peaches for this dessert, and I liked tasting both flavors in every bite.

2. Diner Mania. I may have mentioned my tendency to get homesick when I stay home for a long time. One of the ways I “cure” this illness is by frequency placing I’ll never find in the middle of America. Like gigantic diners.
The midwest may have a lot of things, but we’re certainly lacking on quality diners. And, here on the east coast, they are about as common as Starbucks! On our way back from walking the dog Sunday morning, our neighbors (who read my blog, thanks Marisa!) asked us to join them on a trip to The Alexis Diner, one of the best diners in our area.
Like any good diner, the interior was huge, and the menu was even bigger! I settled upon a garden omelette, which I doused in guacamole and salsa.
I was then informed that the diner had run out of english muffins, so they made me cinnamon sugar toast.
And, the toast took the meal over the top. I don’t know why I don’t eat cinnamon sugar toast every single morning. The coffee was also “diner perfect” and left me wired for the day!
1. Purple Peppers! The BF and I decided that we needed to end our weekend on a healthy note, so I offered to “whip up” a chef’s salad. The main reason I was excited to make this salad?
Purple peppers!
Have you ever seen these before? I saw them on sale at the local grocery store and just couldn’t resist. Not only were they were cheaper than red/green peppers, but they were purple.
The chef salad also included tomatoes, cucumbers, swiss cheese, ham and turkey.
The dinner definitely left us satisfied and feeling somewhat healthy after a bit of indulgence over the weekend. The purple peppers tasted similar to green peppers, but they were a little dryer. I think I’d prefer them sauteed with onions in a stir fry.
I can’t think of a more unique way to end this post than with purple peppers, so with that, I’m off to run with the pup. He is staring me down right now!

I have never had a purple pepper, but they look so fun!
Yes they are super cute, but I must say, I didn’t love the taste, even when I grilled them. I’ll probably stick with green, yellow and red.
