WIAW: Veggie Packed + Cheese

Oh, hello everyone! Notice anything different about the blog? Nope, probably not.

I spent about 10 hours between yesterday and today trying to navigate the murky waters of moving to self-hosting, and I’m still not there. Basically, most of my issues are coming from not being able to export everything from WordPress.com. In case anyone is interested or wants to help me (PRETTY PLEASE), I’m using Bluehost. I’ve done a lot of research at this point, but if you’ve experienced similar issues, I’m all ears! I’ve heard that this process is easy….so far, I’d have to disagree!

But, let’s move on from the frustrating technology issues in my world. After all, it’s What I ate Wednesday (WIAW)! Talking about food is MUCH more fun. The BF was out of town yesterday, and as I’ve said before, whenever the cat’s away, the mice will play. For me, that means eating lots of veggies, since the BF is more of a meat n’ potatoes kind of guy.

I know, I’m such a rebel.

Let’s start with my ultra-gourmet breakfast.

A Fiber One Wrap filled with honey and a couple of dark chocolate chips + Chobani. This breakfast clearly contained the most important food groups for an active Sometimes Healthy Girl: carbs, protein and chocolate.

I’m currently obsessed with both of these products. The Chobani Mint with Dark Chocolate Chips is delicious and tastes like a healthy Thin Mint Girl Scout Cookie. The Fiber One Wraps are light, but carby and filling at the same time. We usually run out of these in less than a week because the BF likes them too.

After breakfast, I ran over to the gym for a BodyCombat class. We’re in between releases, which means the instructors mix a combination of track requests and new tracks to get the class prepared for the next release. I really enjoy this method of easing us into the new material.

Post-Combat, I pedaled on the elliptical for a bit while I studied my NASM book. For those that are curious, thus far, I am having a great time studying for my NASM certification. Fitness has always been so fascinating to me, so I look forward to every new chapter that I read, whether it’s on lifestyle modification or the more scientific material, like anatomy. I cannot wait to take the test! (wow, that’s the first time I’ve ever said something like that in my entire life).

I’ll detail the process of getting certified for you all in a later post because I’m still getting my feet wet.

After some studying, I worked up a sweat for day 5 of the 100s challenge. Since you can do this workout anywhere, I wanted to share it with you guys, but beware, the burpees will exhaust you! The workout takes about 20 minutes and integrates simple strength training body weight movements (squats, pushups, situps and tricep dips) with cardio bursts.

Slide1As a reminder, the 100’s challenge is from Blonde Ponytail and challenges you to do 100 squats, push-ups and sit-ups a day for 21 days. While they don’t need to be done all at once, sometimes it’s nice to knock it off in one swift workout!

After the intense workout, I was more than ready for a little snack. I stopped by the Italian deli by my gym for a coffee and the homemade focaccia bread caught my eye.

It was super cheesy and sort of tasted like a very bready mini pizza. I only ate half because I wanted to save room for lunch.

Lunch was a giant salad, packed with veggies, including tomatoes, cucumbers, mushrooms. I also included avocados, fresh mozzarella and olives to up the nutrition and healthy fats in my salad.

The white stuff that you see on the olives is garlic. Since no one was around to kiss, I figured I might as well indulge in a bit of garlic too! My breath smelled FANTASTIC after lunch.

A couple of hours after lunch, my stomach started grumbling so I had a bit of this Tomato Cucumber Salad that I made on Sunday.

Our friends have an amazing garden and generously presented me with a giant bag of fresh tomatoes on Sunday. I combined the tomatoes with some cucumbers, sundried tomatoes, chickpeas, olive oil, feta cheese and lemon. The result was a flavorful salad that made me feel like I could hold onto summer for a little bit longer. I’ll share the recipe this Friday!

Throughout the day, I nibbled on some Goldfish that went unpictured, and around 6:00 before taking Cole for a walk, I made myself a snack plate.

Tomatoes, fresh mozzarella, white cheddar and some mini triscuits. In case you haven’t notice, I’ve been a bit heavy on the tomatoes and cheese these days.

The cheese veggie theme continued into dinner where I created one of my favorite spaghetti squash dishes of all time: cheesy spag squash.

Usually my first time for a recipe involves a few glitches, but this dish was close to perfect! Again, I’ll share the recipe Friday, because this post is getting too long. Ingredients included Almond Milk, Laughing Cow Cheese, Greek Yogurt, MORE fresh mozzarella and a bit of basil for seasoning.

The key to the creamy cheesy sauce was the cornstarch, which helped to thicken it, and the mozzarella, which made it super cheesy! I devoured this bowl in about 5 minutes, while watching Extreme Weight Loss and crying. This is my typical Tuesday routine, and though the show was not on last night, I happened to have a few saved up on the ol’ DVR. Phew!

Dessert was yet another venture into my new favorite boxed mix: Pillsbury Lil’ Donut Kits. This time I tried the Maple Glazed flavor, and in just about 20 minutes, I had about 25 mini donuts that were the perfect cure for my sweet tooth!

The maple flavored glaze is sinfully sweet, and I love how the sprinkles are fall-themed too! A great desert to whip up in a flash for some house guests. I happen to have a friend staying with me later this week, so I’ve made her the PERFECT “welcome to my home” treat!

Can’t think of a better (or sweeter!) way to welcome my house guest!

And, of course, there is no better way to end a WIAW post than with donuts, so I’m off!

  1. I love your spin on the #100challenge! I am doing it to and try to mix itup with different kind sof push ups, squats and sit ups! Also that salad with the olives looks so bangin’!!

    RE: moving to self hosting – this can be a total nightmare. My boyfriend did it for me a year ago and it broke my blog for like a week while he figured out how to do it. I think he ended up reading a LOT of forums about WordPress migrating and search for people who had the exact same issues that he was seeing with mine. Hope that helps πŸ™‚

  6. Hey buddy! I moved over on the weekend and it was a pain in the ass, but that is because I bought a domain with godaddy and had to transfer from that to bluehost. I spent nearly all day sunday on the chat with them, and overnight the servers changed over and it started working! Which parts are you struggling with/where are you up to now? Not sure how much help I’d be but I can try so feel free to shoot an email πŸ™‚
