A Healthy Start to your Day: Baked Blueberry Oatmeal

Before we closed down shop in the kitchen for a couple of weeks, I snuck in to make the BF’s favorite breakfast this past Sunday: Blueberry Baked Oatmeal. Of all the breakfasts I’ve cooked, this one is by far his favorite. It’s the one he proudly talks about to his friends at parties as he boasts of my skills as a breakfast chef.

The best part is that it’s 100% healthy and extremely easy to throw together. When I have friends over for brunch, I’m always tempted to throw together an elaborate, decadent and unique dish, like Fruity Pebble Pancakes (I said elaborate…not elegant). Sometimes, however, it’s nice to cook up a warm, comforting and healthy dish for my guests. Enter Blueberry Baked Oatmeal.

Packed with fiber, this healthy comfort food breakfast draws upon the flavors of maple syrup, honey and blueberries to achieve the perfect of level of sweetness. Cook it for a group of people or simply to impress your significant other (leftovers can be reheated in a pinch!)

Since the New Year is all about healthy changes, and breakfast is the most important meal of the day, you might as well start with this baked oatmeal.

Doesn’t it look positively scrumptious? I also like to test other fruity combos, such as apples and raisins, strawberries and bananas and even peaches! If you want to get a little Sometimes Healthy, you can go ahead and throw some chocolate chips into the mix…but I would NEVER do that.

I have been working on a fun workout to share with all of you, but it’s not ready yet. So, this week you’ll just be getting a recipe from me. Feel free to checkout some of my printable workouts on the blog. By far, my “Create Your Own Bootcamp” Workouts and kickboxing workouts are the most popular on Pinterest, so maybe you should give one of them a try on this dreary Friday?

Before signing off, I wanted to share a picture that my best friend, Becca, texted me last night. She thought I might get a kick out of what her son, Brody, was having for dessert.

Ice cream topped with Goldfish and sprinkles. I’ve said it before, and I’ll say it again: this boy is a culinary genius.

I am also very proud of the fact that my dessert choices mirror those of a 4-year-old.

On that sweet note, I’m off!

YOUR TURN:

Favorite healthy breakfast?

Favorite kiddie foods that you eat? (Mine is obviously Goldfish!)

Favorite workouts that I’ve posted?

You’re Never to Old…

Happy Friday! Today we’re going to talk about quirks.

One of the “exciting” things about new relationships is discovering the little quirks about a person that make he or she special. (Ok, let’s be honest, sometimes these “quirks” are just strange and not as endearing as one would hope). Well, I happen to be a very unique individual, so I know my BF has had a wonderful time discovering all of my quirks. He’s still not done yet…there’s plenty more.

I shall make you do many weird things...like take pictures of us and our food everywhere we go...

I shall make you do many weird things…like take pictures of us and our food everywhere we go…

For example, he is “fascinated”by my propensity to eat foods that a five-year-old consumes. Each time he looks at me in pure shock, I say to him, “Hey, you’re never too old!” Plus, when I become a mother, I can save on groceries by just eating whatever my toddler eats.

Anyway, I thought it might be fun to do some semi-regular posts on these foods and why I enjoy them. Call it nostalgia, call it Peter Pan Syndrome, call it whatever you want. All I know is that it is fun to let loose and enjoy a Dunkaroo every now and then! Continue Reading →

My First Experience with Overnight Oats in a Jar AND PB Fingers

Ever since I started reading healthy living blogs, I’ve noticed a recurring theme: Oatmeal. Lots and lots and LOTS of Oatmeal. Healthy people love oatmeal – This is not a subjective statement: it is a fact that has been proven by countless healthy living blogs and magazines. Luckily, I too am a fan of this magical grain. And always have been (although it was generally in instant packet form). I am always so impressed with the oatmeal creations that you people come up with. Continue Reading →

Sleeping in With Cinnamon Rolls

I can do better than that, Mr. Quaker!

Last night, I couldn’t sleep SO I decided to sleep in, skip the morning workout and make a tasty breakfast instead. I have been craving cinnamon rolls ever since I took the train to the National Marathon and walked past the tempting Cinnabon store in Penn Station. The smell alone is enough to make a girl swoon! Perhaps I could have justified purchasing one after I returned from DC. After all, I had just run 26.2 miles! BUT, I think it is a bad idea to reward myself with food all the time: I eat to run. I don’t run to eat (Again, don’t always follow this logic but I try…)

So, today, instead of having UNhealthy cinnamon rolls for breakfast. I satisfied my cravings with Cinnamon Roll Oatmeal. I knew that boxed oatmeal just wouldn’t do the trick. I picked up the recipe from LiveStrong, but made a few substitutions and swirled in a little “healthy” cream cheese icing: Continue Reading →

Dessert for Breakfast! (Sometimes Healthy) Oatmeal Banana Split Sundae

Sometimes I have to pinch myself :-)!

For those of you lookin for a little something different for breakfast tomorrow, I think I  have a winner….

This morning, I needed a pick-me-up from a long week at work…so I went for a short 4 mile run in beautiful Central Park. Great ideas often come to me when I’m running. It must be my amazing playlists. Anyway, I thought of the oatmeal waiting for me back in the fridge. I made it last night using Almond Breeze to give it a calcium kick and some creaminess. I was feeling very blah about the breakfast that awaited me.
