Things I Forgot on the Island of Manhattan

It’s fair to say NYC is worlds away from NE – not just in distance, but in the lifestyle. For example, when my best friend, Becca, was lamenting to me about having to get gas before work on a Monday, I equated it to having to wait in line to fill up my Metrocard pass on a Monday morning before getting on the subway (The line’s always extra long on Monday because everyone seems to have missed the boat on getting their s*** together to fill the pass over the weekend when the crowd is much lighter).

Girl vs. Spaghetti Squash – Round 2: Nach-yo Typical Spag Squash

This past Sunday, I was a very ambitious little Sometimes Healthy girl. I planned out ALL of my meals for the week and set a budget for grocery shopping that would hopefully ensure I stayed on track for the Budget Diet all week. If you think that I stuck to the plan, then you clearly don’t me that well yet. Don’t worry – you’ll figure it our soon enough. Anyway, I’ll recap my meal prep and shopping spree in a later post about lessons learned on the budget diet thus far. But for now, let’s talk spaghetti squash! I bought it along with my other groceries on Sunday and couldn’t wait to get a little creative with my fave yellow vegetable that looks like a volleyball. As you recall, I had always been very intimidated by the spag squash, but a few weeks ago (girl vs. spaghetti squash round 1) I finally gave it a shot. And it was mmm mmm good.

This time around, the squash was HUGE. I had to attack it with the knife, to ensure it had lots of room to breathe while cooking in the microwave. Continue reading

Girl vs. Spaghetti Squash

As alluded to in my post earlier today, I will now share the recipe that was both my dinner last night AND my breakfast this morning :-) Didn’t it look delish? (maybe not but it obviously tasted good enough to entice me to eat it twice in 8 hours)….

For the past few days, I’ve opened my fridge and seen a giant spaghetti squash glaring back at me. I have been meaning to do something with this ugly yellow vegetable for the longest time, but I’m just too unambitious by the time I walk in the door from a long day at work. Plus – I hate trying to cut foods that have a hard shell. I’m worried the knife will slip and disaster will strike.

Last night, I finally decided to bite the bullet. I figured if I was going to attack this beastly vegetable, I’d make it worthwhile and create a Spaghetti Squash Casserole. Continue reading
