Last night, I couldn’t sleep SO I decided to sleep in, skip the morning workout and make a tasty breakfast instead. I have been craving cinnamon rolls ever since I took the train to the National Marathon and walked past the tempting Cinnabon store in Penn Station. The smell alone is enough to make a girl swoon! Perhaps I could have justified purchasing one after I returned from DC. After all, I had just run 26.2 miles! BUT, I think it is a bad idea to reward myself with food all the time: I eat to run. I don’t run to eat (Again, don’t always follow this logic but I try…)
So, today, instead of having UNhealthy cinnamon rolls for breakfast. I satisfied my cravings with Cinnamon Roll Oatmeal. I knew that boxed oatmeal just wouldn’t do the trick. I picked up the recipe from LiveStrong, but made a few substitutions and swirled in a little “healthy” cream cheese icing:
First I combined the oats, Almond Breeze, cinnamon, vanilla, Splenda and brown sugar into a bowl, along with 1/2 cup of water
Next, I microwaved the bowl for 4 minutes (mixing after 2). While it microwaved, I combined the ingredients for my cream cheese frosting: 2 tbsp fat free cream cheese, 10 sprays of butter , 2 tbsp of Splenda and 2 tbsp fat free half and half.
When the oatmeal was finished heating up, I threw the cream cheese icing into the microwave for 60 seconds and then drizzled over my oatmeal. The result was a sweet, yet relatively healthy Cinnabon-y oatmeal breakfast. I’ve had Cinnamon Roll oatmeal from a couple of brands, and the flavors weren’t nearly as close as this delicious concoction!
Here is the Cinnamon Roll Oatmeal recipe (adapted from Livestrong):
Oatmeal:
- 1/2 cup Quaker Oatmeal
- 1/2 cup Tap Water
- 1/2 cup Almond Breeze
- 1 tbsp Splenda
- 1 tbsp Light Brown Sugar
- 1 tbsp Ground Cinnamon
- 1/2 tsp Vanilla Extract
Cream Cheese Icing
- 2 tbsp Fat Free Cream Cheese
- 10 Spritz of I Can’t Believe it’s Not Butter Spray (1 tsp of a light butter spread will also work)
- 2 tbsp Fat Free Half and Half
- 2 tbsp Splenda
Directions:
- In medium sized microwave safe bowl combine all ingredients for oatmeal
- Microwave on high for 2 min. Remove stir again and microwave again for 2 mins.
- Combine cream cheese icing ingredients and microwave for 60 seconds.
- Drizzle over oatmeal, mix and enjoy!
I love trying to recreate comfort foods using my little bowl of oatmeal as a base. I’d say this one was a definite win!
