Lunch Envy [luhnch] [en-vee]

“Lunch envy” was rampant here in the office today. Word got out about my Around the World Egg Muffins and no fuss sweet potato hash browns and everyone wanted a taste. Apparently 17 muffins wasn’t enough 😉
While they tasted delish all warm and steamy last night, I must say I prefer them cold. The flavors really set in overnight, especially with the Mexicali. Yummy! The Denver Muffin even tasted better today. I nibbled on the sweet potato hash browns all morning but still left a few for lunch. Again, these were even better today, because I could really taste that cinnamon and sugar. I really think that Egg Muffins may surpass pizza as best-tasting cold leftovers 😉
The Morning Tune-Up
This morning I switched it up a bit and met with a trainer at my gym for a little “tune-up.” Obviously, as a New Yorker who works in PR, I cannot afford to go to a trainer very often. However, I do enjoy a little “trainer tune-up” session every now and then. It ensures that I have some fresh moves to pull from on the weight-lifting front. Also, since I work out alone, sometimes it’s nice to have a fitness champion who’s rooting for my goals with me! I don’t meet with him very often, but I see him at the gym a lot and he always checks in.
Als0, he’s brutally honest with me, which in my opinion, is important. Today, we worked a lot on arm strength, mixing it up with some lunges and squats. My little legs were shaking! At the end of the session, I was pretty proud of myself, but he brought me down to earth reminding me that I’m still a little tentative on any moves that I perceive as difficult, and I tend to give up on them too quickly. Totally true. I need that kind of honesty. Tough love, baby. Body bars are my absolute favorite item in the entire gym (besides the treadmill of course). I’m going to do a whole post dedicated to body bars when I find a little spare time. They are my secret weapon in my efficient eight minute arm routine. Stay tuned!

I’ve got a lot of work to finish today since I’ll be out of the office tomorrow and Friday for the wedding in Texas. As I mentioned one of my Friday Flaw Days, I am a bit of a fearful flyer. Thus, I am already starting to get a little bit nervous…hope the airport bar is fully stocked and ready for this Sometimes Healthy Girl to ease her flying nerves via a little Pinot 😉
PS – Thanks for all of the comments on hours of sleep. They inspired me to try to get a little more of it every night. We’ll see if I can make it happen!

Wow, that looks like the perfect breakfast! I’d be jealous too if my coworkers brought that in 🙂 Eggs + sweet potatoes are some of my favorite foods ever!

Trainers are so darn expensive, but going once in awhile is a great idea. Like you said, gives you some new ideas and helps you to focus on areas that need a bit more attention!
Favorite hot food to eat cold? Hmmm… I would have to say pizza 😀
