Last week, I spent much of my time in the kitchen, stirring my “witches brew” dutch oven to cook up a whole bunch of tasty Halloween treats. So, this week’s “What I Ate Wednesday” WIAW may dull in comparison to a post that talks about “Pumpkin Butter Wishes and Candy Corn Dreams.”
I tried to keep most of my meals Sometimes Healthy, in anticipation of the inevitable Halloween candy plunge (or, if I’m ambitious, I may even make the treats from Monday’s post with the leftover candy).
Breakfast was a bit “boring” compared to the creative dishes that I usually whip up for my first meal of the day. I’m a huge fan of breakfast, so when I have the time, I tend to go overboard on my breakfast dishes. However, yesterday’s meal was a standard bowl of Cinnamon Puffins cereal with Almond Milk.
And don’t start accusing me of dipping into the sugar cereal stash to finish off the remainder of my Almond Milk. I would NEVER do something like that. I’m a healthy living blogger after all.
Seriously, if you had the chance to start your day with strawberry Almond Milk, would you pass it up? I rest my case.
After breakfast, I headed over to the gym for a quick BodyCombat class. On the way to the gym, I gulped down this giant iced coffee, because I was feeling a bit sluggish.
If you’re wondering why it’s so creamy-looking, it’s because I poured some of my favorite Pumpkin Spice Creamer into a tupperware container, brought it with me to DD and dumped it into my giant coffee. Yep, I’m THAT girl.
After the gym, I snacked on some coconut milk and my latest obsession, Monster Chocolate Mint Clif Kid Z Bars.
Lunch was my favorite: a big ol’ salad. I topped it with some leftover black bean butternut squash chili from last week, cheese, some veggies, and of course, some guacamole.
After lunch, I had to run Cole over to his least favorite place in the entire world: the vet. His appetite was a little off, and he has been having trouble jumping and running. Poor guy shakes the entire time from the minute we walk in the door of the vet’s until we leave. If I drop the leash for even a second, he’ll try to make a run for it!
Luckily, he just had a sprain, and the doctor was able to give him an anti-inflammatory shot to help with the pain. You can bet I showered him with hugs, kisses and cuddles as soon as we got home to help him forget the “traumatic experience.”
I enjoyed a random afternoon snack of tomatoes, mozzarella, olives, some Buffalo Wing Pretzel Crisps (addicting) and Sweet Potato Triscuits. As you can imagine, it hit the spot.
Dinner was consumed while watching The Voice (am I the only one who is not impressed with this year’s contestants?) and was a no-fuss plate of sweet potato topped with avocado, cheese, salsa and greek yogurt. I filled the rest of the plate with a simple salad.
After dinner, I got to work on a little Halloween treat for my Girls on the Run team tonight, Spooky Chocolatey Rice Krispie Treats.
To make these festive rice krispie treats, I simply melted the marshmallows and butter over the stove, as usual, and then stirred in 1.5 cups of Wilton orange white chocolate chips. I then folded in the cereal, festive sprinkles and some orange/black chocolate chips. In case you’re wondering, yes, I did take that sample from the corner of the pan. I can’t exactly serve something to my girls without trying it! Now, that would be just wrong.
Dessert was Edy’s Caramel Delight Ice Cream, covered in whipped cream, candy corn, some leftover rice krispie treats and caramel bits.
So much for abstaining from candy pre-Halloween. Oh well, at least I didn’t give in until the end of the day.

Candy corn on top of ice cream – love it or hate it?
Candy corn gets all weird, hardened and frozen when you put it on top of ice cream, but for some reason, I LOVE the new texture. Same with Swedish Fish.

Thanks I love the jars too! I’m still hooked on Pumpkin Spice Creamer, but I’m also into the Girl Scout Edition creamer these days.
Candy corn on top of ice cream – say what! You’re a pure genius to think of something so clever. Throw some almonds in that mixture & it sounds like heaven!
