Cookie Butter Stuffed French Toast + One Song Kickboxing Workout

Remember that jar of cookie butter that I was so proud of myself for not eating all in one sitting?

Well, the bad news is that it’s all gone.

The good news? I sandwiched it in between some pieces of thick white bread and caramelized bananas, drenched it in a sweet egg wash, threw it on the griddle and created your new favorite breakfast. You’re welcome.

No, seriously, if you make this Cookie Butter Stuffed French Toast, you may find that every other breakfast food all of the sudden seems a bit boring.

I suppose that french toast slathered in Cookie Butter isn’t necessarily the healthiest thing in the world, but it’s cold and snowy outside, and you need a sweet, filling breakfast to keep you warm. If you’re not in the mood to brave the cold/snow to head to the gym, never fear. After seeing the popularity of my “Countrifed One Song Workouts” on Pinterest, I decided to create a kickboxing workout in a similar style: 4 fast-paced rap songs matched with high intensity, heart-pumping kickboxing moves. You’ll definitely break a sweat.

You may want to eat this french toast after the workout, but if you cannot wait until then, I won’t judge…

Cookie Butter Stuffed French Toast

A breakfast classic receives a major boost when slathered in cookie butter and stuffed with sweet, caramelized bananas.

Ingredients
  1. 8 slices thick Italian white bread
  2. 3/4 cup Egg Beaters
  3. 1/2 cup Almond Milk
  4. 8 tbsp Cookie Butter
  5. 3 bananas, sliced
  6. 1/2 cup granulated sugar
  7. 3 tbsp cinnamon
  8. 1 tbsp vanilla extract
  9. nonstick cooking spray
Instructions
  1. Start by caramelizing your bananas. Combine 2 tbsp of cinnamon in large bowl with granulated sugar. Slice bananas into thick coins and roll in sugar, until completely coated.
  2. Add bananas into nonstick pan coated in cooking spray and set to medium high heat.
  3. Cook bananas until light to golden brown underneath. This should take about 4-5 minutes. Be sure to lift with a spatula frequently to check on them - they can overcook easily! Once browned, flip the bananas to the other side and cook for another minute. Transfer to plate and set aside.
  4. Wash pan and respray with nonstick cooking spray - set over medium high heat.
  5. In medium bowl, whisk together egg beaters, Almond Milk, 1 tbsp vanilla extract and cinnamon - set next to stove.
  6. Spread eight slices of thick white bread with 1 tbsp of Cookie Butter. Top 4 of the slices with bananas (about 4-5 per slice) and press slices together tightly.
  7. Dip sandwiches in egg mixture for a few seconds and quickly place on griddle. Depending upon size of pan, you may want to just fry one at a time, respraying after each one cooks.
  8. Cook until golden brown - about 2-3 minutes per side and dip in cinnamon/sugar mixture once browned.
  9. Cut each french toast sandwich in half and serve up with some seasonal fruit, whipped cream, chocolate syrup...or more Cookie Butter.

After you slosh french toast in sugary, smooth cookie butter, one would think that the Sweet Tooth is satisfied, right?

Nope, I went ahead and drizzled chocolate syrup on top and then finished it off with a giant dollop of whipped cream.

But, if you’re looking to healthify, serve it up with fresh or frozen fruit. I recommend mangos and blueberries…

No, you cannot jump through this screen and eat my Cookie Butter French Toast. They haven’t invented an app for that yet, but give it time.

It’s a wonder how I didn’t gain 5 pounds after writing this post, because I tried each of the above toppings, along with eating the french toast plain. Blogging is such HARD work.

For the record, the french toast is sweet enough to stand on its own, but as I always say, when something is sweet, why not make it sweeter?

Believe it or not, there are some healthified components to this dish. The egg wash is comprised of egg beaters and healthy almond milk, and sure the bananas are coated in sugar, but hey, it’s still fruit. And finally, the bread. Omaha friends, you must use Rotella’s Pane di Casa bread for this dish. 60 calories, no added sugar and deliciously hearty. Friends outside of Omaha, I would suggest Challah bread (if you’re not worried about the health factor) or any low-calorie bread if you’re trying to be Sometimes Healthy.

Okay, I suppose you’ve seen enough pictures of  my sinful breakfast recipe. This is a healthy living blog after all.

Awhile ago, I posted a Country Girl Workout – a 15 minute bootcamp circuit workout set to some of my favorite country songs. It’s been relatively popular on Pinterest, with more than 200 repins and 35 likes.

 I have no doubt that part of the reason for its popularity is the country music, but I also think it’s the idea of having a pre-set playlist with accompanying exercises. Music is the #1 motivator for most of us after all.

So, I thought to myself, “Why not create a similar concept for kickboxing?”

Oh, so many things to say about this workout. First off, do you like how we slowly travel back in time through music? From Macklemore to C + C Music Factory. Bet you never thought you’d see these songs meshed together in a workout, along with “Mama Said Knock You Out” and Kanye.

As for the actual workout, if you punch and kick as hard as you can, you’ll definitely get that high calorie burn. As always, remember the importance of correct form for both calorie burn and preventing those pesky injuries. Email me with any questions, of course!

    Where do you think of these ideas?? I love French Toast, so I’m always game for any french toast recipe. But, then you went and added Cookie Butter to it! Cookie Butter is practically a food group for me. My favorite way to eat it is straight out of the jar ๐Ÿ™‚

    • Most of my best ideas come to me at the gym ๐Ÿ™‚ I’ll be running on the treadmill and, all of a sudden, I just have to get to the kitchen to make Cookie Butter French Toast…
